Drunken Spicy Wings

On your next drunken chicken outing, you might want to try something a little different with your bird’s wings and feet. If you’re a fan of hot wings or buffalo wings, here’s a quick and easy way to enjoy the flavor of hot wings without dragging out the fryer and oil. Start with the wings and legs of your chicken. Before inserting into the can, pat the wings and legs dry with a paper towel. This ensures that the limbs will be crisp when you are done cooking your chickens. When removing poultry from the grill, hold the wings and cut side up. An electric knife works best for a clean, close cut. After removing the wings, move down to the drumsticks. Be careful with the legs making sure not to pry the bone out of the meat. Cut down parallel to, but not through, the beer can.

Next, add the pieces to a skillet. I use cast iron because it evenly distributes the heat throughout the pan and I like to put the wings back on the grill to cook them in the hot sauce before serving. Using a cast iron skillet allows you to do this without worrying about the handle melting. For your sauce you can use the base you prefer. Some popular sauces for wings are Frank’s RedHot Sauce, Hooter’s Hot Wing Sauce, and Louisiana Hot Wing Sauce. Use the sauce that you like best. I have tried all of the Franks brand sauces and prefer their new Cayenne Pepper Chunky Sauce because of the consistency. You’ll need a nice thick sauce to mix with the beer, butter, and onions. Below is the recipe to mix all the ingredients of the sauce. Toss all the wings and legs into the pan making sure everything is covered, then return the pan to the grill for 15 minutes to 1/2 hour.

Homemade Boozy Hot Wing Sauce

1 bottle of wing sauce

1 bar of butter

12 ounce beer

1/2 onion (sliced)

2 teaspoons ground black pepper

Over medium heat, add a 12 oz beer, stick of butter, black pepper, and sliced onions to a small saucepan. Let cook for 10 minutes. Remove pan from heat and add hot wing sauce. Mix well and add the wings. Make sure all the meat is covered with sauce and return it to the stove or grill for 1/2 hour. Remove, cool and serve!
